Hi this is Graham Foster welcoming you to another exciting edition of DreamBodyNow News.

I start this week with an explanation and greater detail of how to calculate the "real " fat content of your food using the food labels . I expect many of you found last weeks revelation pretty interesting ?

Any how this is how you calculate the "actual" fat content giving you a much fuller picture of how much fat your food actually contains.

Now you are up to speed maybe I can explain how this system really works ?

The key to unraveling the 'fat code' is this 'Fat Formula' Take the grams of fat on the label (either per serving or eg per 100 grams) and multiply by 9 (there's 9 calories to a gram of fat). Divide this by the calories in that serving and then multiply by 100 to give you the real percentage.

I consider it good to keep the fat percentage low as possible. Below 20% eg no more than 20% of calories from fat.

Ok that has hopefully clarified that situation and you will now know exactly what your eating . Once you have done the calculation write it down in a little note book you can keep with you.

Start every day with a record of what you are eating the Dreambody system is ideal for this , otherwise keep tabs in a diary of VERYTHING you eat and also write down where you were, how you felt and what you ate also keep tabs on your reason for eating (eg boredom , at a party , social normal meal time ... )

The act of writing everything down will work wonders as it will make you think about what you are eating why and how you dealt with the situation in the past .

I am often asked: What are Good Fats & Bad Fats. It's a great question because it's important to realize that not all fats are bad for you and that not all fats make you fat per se!

Good Fats are found in foods such as fish, particularly oily fish, avocados, nuts and olives; also in seeds such as pumpkin, flax and sunflower.

These foods are rich in healthy oil and play a vital role in providing nourishment to our skin, hair, nails and vital organs. They help our body to metabolize fat, with the result we lose weight. They are vital to our very existence, which is why they are called 'essential' fatty acids

Bad fats are saturated animal fats and are found in foods such as red meats, pork, burgers, cheese, and butter. These fats are hard for the body to digest, they clog our arteries, interfere with blood sugar levels, raise cholesterol and blood pressure and can lead to heart disease and stroke. Of course, they also make us fat!

Saturated fats should be avoided where possible or at the very least they should be kept to a minimum.

There is another type of 'Bad Fat' called - Hydrogenated Fat.

The process of 'Hydrogenation' changes the molecular structure of liquid vegetable oil so that it hardens at room temperature. hydrogenated fat can be found in margarine, potato chips, chocolate, ice cream, pastries, baked goods, processed and packet foods.

Hydrogenated fat changes into dangerous ''trans fatty acids' which have been linked to heart disease, diabetes and cancer. Always read your food labels and avoid 'hydrogenated fat' and 'trans fatty acids'

Here's this week's delicious and healthy recipe from our
resident cook, Josette Gigon.


Warm Winter Stew– (Serves 4 people)

Ingredients:

- 1 red onion chopped
- 2 cloves of garlic squeezed in garlic press or chop finely
- 3 potatoes chopped
- 1 sweet potato chopped
- 4 carrots chopped
- 1 tin chickpeas
- 1 cup red lentils (well rinsed and strained)
- 1 cup peas
- 1 cup green beans chopped
- 1 cup mushrooms chopped
- 1 tin of tomatoes
- Olive oil
- Balsamic vinegar
- Cider vinegar
- 1 teaspoon sugar
- 1½ pints vegetable stock

Spices:

- ½ teaspoon cinnamon powder
- ½ teaspoon curry powder
- ½ teaspoon chili flakes
- ¼ teaspoon ground ginger
- ½ teaspoon crushed coriander seeds

Herbs:

- Fresh parsley finely chopped

Method:-

- Fry the red onion, mushrooms, garlic and spices on a low
heat for about 5 mins
- In a small pan add the tomatoes, sugar, garlic and a splash
of olive oil. Bring to boil on a high heat then simmer until
the mix is of a creamy consistency
- Transfer contents of both pans to a large pan, adding the
potatoes, sweet potato, carrots, green beans and vegetable
stock.
- Bring to the boil before lowering the heat to simmer for
about 50 minutes
- 20 mins before the end add the peas and chickpeas
- 10 minutes before the end add the lentils
- At the very end add balsamic vinegar and cider vinegar
to taste

To Serve:

- Mix in the finely chopped fresh parsley
- Sprinkle with Parmesan or Picorino Romano cheese
- Serve with fresh wholemeal breads and drip with olive oil.
